Grandma's Goodie Recipes

- Following are a few recipes for goodies for children on special diets. As more recipes are found they will be added to this page. Please remember ALL recipes are made with organic and/or gluten free / casein free (GFCF) ingredients.

                                 Caleb's Cookies

1 cup cashew butter or almond butter

1/2 cup honey

2 large eggs

1 tsp baking soda

1 1/2 - 2 tsps cinnamon

dash of nutmeg

 

- preheat oven to 350 degrees - cream together all ingredients

drop by teaspoonfuls onto greased cookie sheets. Bake 10 - 12

minutes. Allow to cool on cookie sheet for 5 minutes.

These cookies are a real favorite. They are healthy and can be

eaten often. (please note: if nut allergies are present use organic

Sunflower Butter and add 3 - 5 minutes baking time)
                  Joshie's Favorite Cake

8 oz GFCF chocolate chips

6 tblsp GFCF margarine

6 large eggs

1/4 cup honey

 

- preheat oven to 275 degrees - grease 9 inch pan, melt chocolate
chips, microwave can be used, but check every 20 to 30 sec, stir

and repeat until chocolate is melted. Cool slightly then stir in egg

egg yolks and honey. Beat egg whites to a soft peak. Gradually

fold chocolate mixture into egg whites. Pour mixture into the pre-

pared pan and smooth the top. Bake 40 to 50 minutes. Allow to

cool.
                Chocolate Nut-Butter Balls

(Note: peanut butter, cashew butter, almond butter, or sunflower

butter are interchangeable in this recipe - all ingredients are organic)

 

3/4 cup cashew butter

1 3/4 cup GFCF 10x sugar

1/4 cup GFCF margarine

1/2 tsp vanilla

 

Mix all above ingredients together and set aside. Using double

boiler melt 8 to 12 oz GFCF chocolate chips. Add 1 1/2 tsp olive

oil. Roll nut butter mixture into balls. Dip in chocolate mixture.

Set on parchment paper, let cool then refrigerate.
            Tasty "Faux" Peanut Butter Fudge

5 tablespoons olive oil or canola oil

5 cups gluten-free mini marshmallows

1 cup gluten-free peanut butter (Note: Almond butter may be
substituted; if nut allergies exist you may substitute
sunflower butter)

 

- Pour oil in top section of double boiler (be sure water in bottom section is boiling)

Add GF marshmallows slowly until all are melted (this mixture will be thick)

Add cup of GF peanut butter or alternative, stirring constantly

(This mixture will remain thick, it will never boil!)

Continue stirring for 5-7 minutes

Pour into greased pan and cool, this mixture hardens quickly

Cut into pieces when ready and enjoy! (Keep refrigerated)

This is a nice treat for kids on GF diets
